Mucha gente lo presenta como una novedad, pero en realidad estamos hablando de una elaboraci\u00f3n muy antigua: un caldo hecho con huesos, agua, sal y muchas horas de cocci\u00f3n lenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En Can Vives nos gusta mirar estas modas con sentido com\u00fan. El <strong><a href=\"https:\/\/canvives.cat\/es\/tienda\/brou-dossos-pot-de-314-ml\/\">caldo de huesos de ternera<\/a><\/strong> no es ning\u00fan invento moderno ni ning\u00fan producto milagroso. Es un caldo tradicional, sabroso, nutritivo y muy vers\u00e1til, que ahora internet ha vuelto a poner en el centro de muchas cocinas.<\/p>\n\n\n\n<h2 id=\"h-que-es-el-brou-d-ossos\" class=\"wp-block-heading\">\u00bfQu\u00e9 es el caldo de huesos?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph translation-block\">El caldo de huesos es un caldo elaborado principalmente con huesos de ternera, agua y sal. La diferencia con un caldo m\u00e1s r\u00e1pido es el tiempo: para conseguir un buen resultado hay que cocerlo muchas horas, a fuego muy suave.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Esta cocci\u00f3n larga permite extraer sabor, gelatina y parte de los nutrientes presentes en los huesos y en los tejidos que los rodean. Por eso, cuando el caldo se enfr\u00eda, puede adquirir una textura ligeramente gelatinosa. Esta textura es una buena se\u00f1al de que se ha hecho una extracci\u00f3n lenta y correcta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De manera general, una tassa de brou d\u2019ossos pot aportar aproximadament <strong>8-10 g de prote\u00efna<\/strong>De forma general, una taza de caldo de huesos puede aportar aproximadamente 8-10 g de prote\u00edna, m\u00e1s que muchos caldos convencionales. Tambi\u00e9n puede contener peque\u00f1as cantidades de minerales como calcio, magnesio y f\u00f3sforo, aunque las cantidades var\u00edan seg\u00fan los huesos utilizados, el tiempo de cocci\u00f3n y la receta.<\/p>\n\n\n\n<h2 id=\"h-per-que-es-parla-tant-dels-beneficis-del-brou-d-ossos\" class=\"wp-block-heading\">\u00bfPor qu\u00e9 se habla tanto de los beneficios del caldo de huesos?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph translation-block\">El caldo de huesos se ha hecho popular porque se asocia al col\u00e1geno, a las prote\u00ednas y a una cocina m\u00e1s natural y reconfortante. El col\u00e1geno es una prote\u00edna presente en los huesos, la piel, los tendones y otros tejidos animales. Durante la cocci\u00f3n larga, parte de este col\u00e1geno se transforma en gelatina, que aporta cuerpo y textura al caldo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ahora bien, conviene explicarlo bien: cuando comemos col\u00e1geno, el cuerpo lo digiere y lo transforma en amino\u00e1cidos. Por tanto, el caldo de huesos puede formar parte de una alimentaci\u00f3n equilibrada, pero no debe venderse como una soluci\u00f3n m\u00e1gica para la piel, las articulaciones o la salud digestiva. Lo m\u00e1s importante sigue siendo el conjunto de la dieta y del estilo de vida.<\/p>\n\n\n\n<p class=\"wp-block-paragraph translation-block\">Como dato orientativo, una taza de caldo de huesos puede contener alrededor de 50 kcal, 9 g de prote\u00edna, muy poca grasa y un aporte moderado de minerales. Estas cifras pueden variar mucho seg\u00fan la receta, la concentraci\u00f3n final y la cantidad de sal.<\/p>\n\n\n\n<h2 id=\"h-com-fem-el-brou-d-ossos-a-can-vives\" class=\"wp-block-heading\">\u00bfC\u00f3mo hacemos el caldo de huesos en Can Vives?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph translation-block\">En Can Vives elaboramos nuestro caldo de huesos de ternera con una proporci\u00f3n sencilla: una parte de huesos, dos partes de agua y la sal justa para conseguir un caldo sabroso pero equilibrado.<\/p>\n\n\n\n<p class=\"wp-block-paragraph translation-block\">Primero llevamos el conjunto de los ingredientes a ebullici\u00f3n. Cuando arranca el hervor, espumamos con cuidado para retirar las impurezas que suben a la superficie. Despu\u00e9s bajamos el fuego y mantenemos una cocci\u00f3n muy suave durante 16 horas seguidas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Esta cocci\u00f3n larga es lo que da profundidad al caldo. No buscamos un hervor fuerte, sino una cocci\u00f3n lenta y constante, que extraiga sabor sin ensuciar el resultado final.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Una vez terminada la cocci\u00f3n, colamos el caldo, abatimos la temperatura y, cuando se enfr\u00eda, retiramos con cuidado la grasa que ha subido a la superficie. As\u00ed obtenemos un caldo limpio, ligero y sabroso. <strong>Caldo limpio, ligero y sabroso.<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph translation-block\">Finalmente, lo envasamos en tarros de cristal de una raci\u00f3n, pr\u00e1cticos para tener siempre a mano un caldo de calidad sin tener que cocer huesos durante horas en casa.<\/p>\n\n\n\n<h2 id=\"h-tambe-pots-fer-lo-a-casa\" class=\"wp-block-heading\">Tambi\u00e9n puedes hacerlo en casa<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Si te animas a preparar tu propio <strong>caldo de huesos casero<\/strong>, en Can Vives tambi\u00e9n puedes encontrar <strong><a href=\"https:\/\/canvives.cat\/es\/tienda\/hueso-de-ternera\/\">huesos de ternera<\/a><\/strong> para hacerlo t\u00fa mismo<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Solo necesitas tiempo, una olla grande y paciencia. Un buen caldo de huesos necesita horas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Adem\u00e1s, durante los meses de Julio y Agosto de este a\u00f1o, <strong>\u00a1los huesos de ternera est\u00e1n a la mitad de su precio habitual! <\/strong>Es un buen momento para comprarlos y congelarlos<\/p>\n\n\n\n<h2 id=\"h-com-es-consumeix-el-brou-d-ossos\" class=\"wp-block-heading\">\u00bfC\u00f3mo se consume el caldo de huesos?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La manera m\u00e1s habitual de consumir el <strong>Caldo de huesos<\/strong> es tomarlo caliente, en taza o en un bol, como si fuera una infusi\u00f3n salada o una sopa ligera.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Se puede beber solo, simplemente calentado, o ajustarlo con un poco de sal, pimienta, unas gotas de lim\u00f3n o hierbas arom\u00e1ticas. Hay quien lo toma por la ma\u00f1ana, entre comidas o por la noche, pero no hay una norma fija.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tambi\u00e9n es una base excelente para cocinar:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Para sopas con pasta, arroz, verduras o legumbres.<\/li>\n\n\n\n<li>Para enriquecer guisos, estofados, fricand\u00f3, carrilleras o albondigas.<\/li>\n\n\n\n<li>Para cocinar arroz, fideos, quinoa o patata en lugar del agua.<\/li>\n\n\n\n<li>Para dar sabor a salsas i reducciones.<\/li>\n\n\n\n<li>Para alargar o recuperar platos cocinados que han quedado demasiado espesos.<\/li>\n\n\n\n<li>Para tomarlo con huevo batido, como una sopa r\u00e1pida y nutritiva.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Una raci\u00f3n habitual es de unos <strong>200-250 ml<\/strong>, aproximadamente una taza grande. Si el caldo es muy concentrado o gelatinoso, se puede rebajar con agua.<\/p>\n\n\n\n<h2 id=\"h-tip-can-vives-si-hi-poses-pasta-bull-la-a-part\" class=\"wp-block-heading\">Tip Can Vives: si lo comes con pasta, cu\u00e9cela a parte<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Si quieres comer el <strong>caldo de huesos con pasta<\/strong>, te recomendamos cocer a parte la pasta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Calienta el caldo en un cazo hasta que arranque el hervor. Mientras tanto, hierve la pasta en agua.
